What started as a Fallbrook restaurant in 2004, owned by Ron and Dee Nusser, has expanded to a successful catering business. Brother’s Bistro, tucked away in the Major Market Shopping Center on Main, is known for serving delicious meals to patrons. Their catering service, dubbed “Brother’s Bistro Soup 2 Nuts Catering,” serves the same delicious food that patrons enjoy in the restaurant.
The culinary focus is mainly Mediterranean with an offering of fish and shellfish, including mussels and crab. “Our fish is very fresh,” Dee mentioned, “it’s delivered four or five times a week.”
Dee says that she likes the Mediterranean theme because there are so many countries that border the Mediterranean Sea, including Italy, Spain and France. “It gives us an opportunity to offer a variety,” she said.
Dee loves catering as much as she does the restaurant and tries to please her clients whatever their culinary wishes are. “I can basically do anything, except egg rolls,” she said. She hasn’t had luck with the egg rolls as of late and is keeping them off the menu.

There are benefits to having a party catered, Dee noted, “Knowing food safety is very important.” She also mentioned that doing it on your own usually “takes longer than you think and costs more than you think.”
She also gives valuable advice to her catering clients and mentioned that if alcohol is being served, clients can call their insurance agent to get a one-day binder to cover the event.
Dee has been cooking since she was 7 years old. When she met Ron they opened up their own restaurant and have owned four establishments during their life together.
She commented, “I love to feed people and have them give feedback to me...I love having people try different things.”
Dee uses her own recipes in the restaurant as well as for the catering business, and they go back 30 years. She commented, “I taste everything, absolutely everything, before we serve it to anybody. I am very meticulous. We have a great staff, but I oversee everything.”
Lynne Hayes, a catering client and owner of Horse Spirit Ranch of Bonsall, raved about the crab cakes, “These crab cakes…the taste, the flavor…they were so fresh. Not a real fishy or oily taste. No shells in it either. It wasn’t all bread or fillers.”
A special sauce is drizzled over the crab cakes – homemade “Green Goddess” dressing. The sauce is a mix of sour cream, mayonnaise and fresh herbs. “It is marvelous!” Lynne commented.
Dee noted, “We serve things that nobody else in town does; and with the catering menu I really get to flex my imagination.” The White Chocolate Macadamia Nut Bread Pudding is an example of a unique menu item. It is decadently delicious served with caramel sauce and whipped cream.
Lynn Hayes commented on the overall value of the Brother’s Bistro dining/catering experience, “It is the presentation and the quality as well as the quantity…I am totally impressed with it; and I know that my pocketbook can stand it. We work hard for our money.”
