Learn to make cheese at Morning Song Farm on April 20

FALLBROOK – Morning Song Farm will offer a beginning cheese-making class on Saturday, April 20. Participants will learn fun, easy, and delicious cheeses to make.

“Students can impress their friends with cheesy gifts and try out a fun and different hobby that brings dividends of appreciation,” said Donna Buono, owner of Morning Song Farm. “It’s easier than people think!”

Participants will be provided with handouts and easy-to-follow recipes so that their success is insured when they repeat the steps at home.

Buono said the class will include information about which types of milk to use, cultures, and why certified organic milk isn’t always the best choice.

“We’ll make two or three different cheeses: Garlic Ricotta, Herbed Queso Fresca, Fromage Blanc, Paneer, Feta, and Neufchatel cream cheese and sample them during the class,” she explained.

The class will begin at 9 a.m.

“Students can arrive at 8:45 a.m. if they like, to sample herbed cheeses as well as our just churned butter and freshly milled-macadamia muffins,” said Buono. “Warm up with hot coffee or tea while meeting fellow cheese-loving adventurers!”

Buono, who operates the 20-acre organic farm, invites cheese-making students to meet her Nigerian dairy goats and pet the yearlings and adults.

“Bring a crunchy granola bar or two and you’ll be everyone’s best friend, especially Carl, the herd leader, who eats anything but really gets excited if it’s crunchy,” she said.

The class fee is $65 per person. Payment and reservations can be made by sending an email to: [email protected]. Attendance is by reservation only due to limited class size and supplies. Participants should bring a sweater or jacket, although the barn is heated. Tennis shoes or boots are recommended due to the rough, unpaved pathway to and from the barn.
